    If you absolutely must use less oil try sticking to curies that require less spices and have more fresh ingredients in them:

    Kormas!
    Bhuna as there's less sauce anyway

    Use fresh chilli paste instead of powder

    Anything to reduce the dry powder you would otherwise add.

    Customer feedback is always important in any business. If you are using chef spoon approach then it is good but tries to use proper amount of cooking oil in any food it helps to maintain taste, flavor of food and provides proper nutritional value to our health.
