    Default Reducing the oil?

    Does reducing the oil in the cooking stage dramatically reduce flavor? I have had a request off one of my customers for less oil in the curries I sell, I generally follow the chefs spoon approach?

    I would just go with the chefs spoon approach, you could use less oil but there is a danger you will loose some of the flavour..In my takeaway we use two different seasoned oils to give it that BIR taste and then we simply remove it at the end....It is essential for flavour... Reducing oil can take a while and in a busy restaurant you don't have time for that

    Thanks Fred for the reply I appreciate it,

    I should of said that I have a small business selling the curries frozen over here in Thailand, after microwaving them the oil rises to the top so its easier for them to spot, I totally agree with you on taste.

    In a word, yes. But some folks prefer it cooked with less oil I suppose.

    I spoke to a owner one day about did he offer low oil curries, he laughed about it. However he said due to requests by customers he put on his menus made with cholesterol free vegetable oil, he said he sold a lot more curries all of a sudden as people thought they where getting a healthier option. It was the same vegetable he had been using for years which had printed on the barrels cholesterol free so it was not a lie as such he just made it sound better for you.
